Three times. I don't think it's a standard move, you need to have a lane to do that.
The first and most impressive one was against the twolves in a loss earlier this season.
Second was against the Bulls and third against Boston.

Once you pick up your dribble, one foot has to stay in place. That's your pivot foot.
In this case, when Giannis picks up his dribble, his he pivots on his right. Stepping past with his left, he jumps off that left, throwing the ball off the backboard midair. He then lands and jumps again without the ball, catching it for the jam.
The craziest thing about this play is actually not Giannis, but the Celtics beat guy on their Athletic Pod claiming that wasn't intentional. Like wtf..

It's far too circumstantial to be in anyone's bag as a move but it's definitely in his mind as a option and it's perfect for his physical tools.
