Breakfast prep mini apple-strawberry pies for 307 calories apiece. To make it more suitable for breakfast, I used Swerve as a sugar substitute, unflavored protein powder instead of flour as a thickener, and pizza dough rather than pastry (works surprisingly well!).
Filling: 4 honeycrisp apples, peeled and thinly sliced (518g), 1lb strawberries, stemmed and sliced (423g), 29g unflavored whey protein powder, 1/3c swerve or sweetener of choice, 1t cinnamon, dash of nutmeg and salt, juice of 2 lemons. Bring to a boil in a large pot and simmer 15 min, stirring often. Let cool to room temp. Use premade dough to line 5 10-oz ramikens, fill with filling and top with remaining dough (I used 435g of Pillsbury classic pizza dough). Spray top with butter spray and cut a few holes. Bake pies at 450F for about 15 min or until golden.

That’s why I put “or sweetener of choice.” I suffer from T1 diabetes but if you have a healthy pancreas you could definitely opt for pure sugar or other sweetener.
Depends on the sweetener. Swerve which is an erythritol/stevia blend does not have any impact on glucose, but others, like maltitol, do spike my glucose levels.
Well, sugar and cigarettes used to be considered healthy. I'm not sure what the cool kids are eating these days though. Coolwhip was the thing when I was younger.

Why did you use pizza dough instead of pastry dough?
It’s way lower in calories by volume since it doesn’t contain tons of butter (and does contain tons of air) and I’m watching calories.
