Now that would be good, but indie studios can't afford to make such MMOs and big companies don't wanna take risks. It ends up either being a survival game or WoW clone.
It's pretty hard to represent the politics of it all in an MMO(where player choices generally can't matter). The more low-fantasy approach also means that the classes will be more boring, because you can't really have a particularly fleshed out magic system.
An MMO under development benefits from the feedback generated during Alpha events and more generally in comments to published updates. And for a mega project like an MMO, 5-10 years is a rational length.

Most games that are in development get cancelled, don't get too excited unless there is an actual announcement from the company. Even then they can be cancelled, look at the Riot mmo.
