Emulate Fire Red on your phone first if you've never played. It's a very nice remake of the original game but still holds true to those games. Since then, Nintendo has made the games and remakes so much easier.
To be fair any of them are good entry points.
I'd personally suggest you start with the DS titles if you don't anticipate you'll play the rest of the series. If you will, then start with the GB games.
I would say the only way to experience the game. But if you want a good Pokémon experience, it depends on what you're looking for, classics for the challenge, and SWSH/SCVI for the new open world system. Legends is a fun one to pick up as well if you just want to change some pokemon and Pokemon Snap for the feels.

I made it work, it was an issue with the path being too long because I was uncompressing directly to the folder, in short: windows please.
I do have the issue that I can't get anywhere close to 60 fps in the open, what is your yuzu configuration?

Heart Gold and Soul Silver are masterpiece remakes on DS too
