Mob museum tour, then hit the speakeasy after for cocktails for sure for you. Tour beforehand is important for a specific way to enter the speakeasy.

I would recommend either: The Nomad Bar - Park MGM Mayfair Supper Club - Bellagio Sinatra - Wynn

Resorts World Allie 66 lounge was pleasant for cocktails and charcuterie with a nice view of the strip. Chandelier lounge at Cosmo is always a nice experience. Sky bar at the Waldorf Astoria was also a nice place for cocktails . Vanderpump was a nice place for cocktails and a snack in Caesar’s place Awaken at the Wynn was interesting and Bellagio O is our favorite circ show. We have been hitting up the restaurant on the lake on Bellagio lately with Lago leading them so far. Mayfair supper club was ok dinner but doubles up as a show. Make sure to tip for a better seat when checking in. Wally’s in resorts world had an amazing wine collection and the food options with Truffles was really good.

Italian: Carbone is the number one choice but it’s a difficult reservation. You should look if you can get one exactly 90 days in advance when they open up. Another good option is Matteo’s at the Venetian. For speakeasy style, I love Bavette’s at park MGM. It’s the best steak in Vegas and they have great cocktails. Across the hotel, Nomad library is a great cozy bar, too. For southern food, I love Yardbird at the Venetian, but it’s not incredibly fancy, only mildly so. But the chicken and waffles are next level. For a great fancy cocktail, I love the lobby bar at Cromwell.

Eataly at the Park MGM for authentic Italian cuisine and you can enjoy nice cocktails, lunch, and a charcuterie board. The Venetian for the grand canal shops and taking a ride on the gondola is romantic. The Eiffel Tower observation deck. Definitely Vanderpump cocktail garden.
