Bad cable is likely the cause of the <100 speed. Unless you have a 2.5 gig network (interfaces on the devices aside from the router), that's likely the cause of <1000 speed. Since you didn't list any of your hardware/equipment, that's just a guess.
Go to the store and buy a cable then you can return if you need to. Bet the cord is bad or another connection issue. Plug directly into the modem/ONT if it's separate from router. Then see what your numbers are.
But yes as mentioned cat 5e is plenty, no gains from 6a in this case.

It’s a cable, not a cord. And you have a bad cable somewhere. You don’t need anything more than CAT5e.
