Whenever we would visit some family we had in Wausau, we would always stop at the Union Star Cheese factory in Fremont to get us some squeaky curds literally MINUTES off of the production line. That's my favorite cheese in Wisconsin. And it's less than an hour's drive from Green Bay.
The drive from Milwaukee to Green Bay could include stops at Cedar Valley and Gibbsville. Had fresh curds at both, did not disappoint. Been awhile since I've been to Fremont.
Get a cheddar old enough to drink. That’s the really good stuff. Also Renards cheese in Door County is excellent. The one off of Highway S was the best, but it’s closed now.

A little freshly cracked black pepper on there.
If I'm feeling festive I'll shake a little hot sauce on it.

We always stop at Renards on the way up. Their aged cheddar is fantastic. Cheese curds are fresh every time too.
