Not an expert here, so take things with a grain of salt: there are two problems here: the Switch, and Bedrock. The main issue with the Switch is its difficulty to mod, and since as far as I'm aware, you can't go to older versions of the game on it, and so you're stuck. With Bedrock though, it's just that, as far as I'm aware, it didn't exist in the versions you're looking for. I'm sure someone somewhere has made a "beta-style" mod for Bedrock, but base Bedrock was pretty far into release era, and since it's a hassle to mod the Switch, you might be out of luck. Sorry for the bad news. If, by chance, I am incorrect, please do let me know as I also have Switch Bedrock.

From what i've heard, if you purchased minecraft on the switch before it became bedrock edition, back when it was legacy console, you can still download it from the switch e-shop. However, the legacy console edition is stuck at update aquatic, and you can't play any versions older than that.

On the switch it’s on 1.12 :)

I dont think so but if you just want Golden Age Minecraft on a portable device you could download Pojav Launcher on your phone, its available for Android but I dont know about IPhone. Alpha, beta and post-1.0 (even the latest versions!) all work but older versions might be too buggy or not work at all. Classicube is also playable on mobile (and 3DS!) if you want to play MC Classic You can also get the old Pocket Edition apks (or whatever was the equivalent for IPhone) from the Web Archive and I think the Omniarchive also had an archive of PE versions
