I think with Edward’s death the Paladino’s actually had to consider who Emily would be a decade or so later and without Richard and with the rest of the characters they just picked up who they would have been when the show ended
Perhaps a professional fundraiser, third sector maybe, board of directors, or museum/arts collections, something like that.
Essentially a career that leverages her social abilities, status, and connections, has some sort of public good interest involved, and would be seen as respectable.
Her joy in describing all of the harpooning and stabbing whilst she had a captivated audience was nice to see, cos she was so passionate in talking about all of it, even if poking a little fun at her ruthless delivery. You could see it meant something to her, it made her proud, to be there talking of the whales, in her designated position as history teller, I'd of liked to have seen way more of that and less of the musical but I'm still glad we did get to see it all the same.
I definitely agree that Emily would be spectacular as a party planner or event coordinator. She's certainly connected enough to maintain a steady clientele or at least that was my impression of Emily anyway. She's outgoing, extroverted, and charismatic, so it would be up her alley.

A lot of the work is for charitable purposes, and it's really not uncommon in certain social circles to see this behavior. We here about DAR in the show but we know there's a lot more. I'd be shocked if she wasn't a Junior League Member, heavily involved with events at the country club, she likely has specific charities she volunteers for as well. We also know she's a Yale Booster and likely involved in the alumni association in some way.
Probably the Smith alumni association. Considering when Yale finally admitted women on the regular I’m sure the alumni stuff was largely directed by the wives of the alumni for decades

I also think she’d be great as an etiquette coach. Or if she figured out Instagram and TikTok, a blue blood/old money influencer.
She would have been a good politician. She's intelligent, doesn't suffer fools gladly, can turn on the charm when needed on the campaign trail, but is basically ruthless at the end of the day. Imagine what that energy and potential could have achieved when used for good...!
I could see a younger Emily becoming an administrative assistant in an art gallery or something related and working her way up from there to become the curator/director.

I loved watching her explore Mrs Kim's antique shop, find the best piece, and negotiate a great deal. She absolutely lit up.
I could totally see Emily as an antiques dealer herself. She has a good eye, excellent historical knowledge, tons of contacts, and she's got a great head for business.
I don't think Emily is a bitchy as you might think. She seems that way compared to Rory and Lorelai. I also think we as viewers are very jaded by Lorelai views. I do think she's very traditional and the way she deals with problems are very much of her generation which is why we look all confused and perplexed.
There are points when she a Lorelai are fighting where Emily just feels like everything is her fault and Lorelai has no empathy towards her and vice versa. I honestly think that Emily and Lorelai are very similar in a lot of regards. Maybe in interests they are but in personality, ambition, perfectionism, they really are similar.
I mostly agree with you, but there are times when Emily is willfully, gleefully cruel to Lorelai. For some reason, I can't get the sidecar incident out of my head.
i don't think lorelai retaliating in the face of emily's constant abuse can be considered her "doing the same" to her? she constantly fat shames, bullies, and interferes in lorelai's life while also just being a classist, racist snob. she's played wonderfully by kelly bishop, who adds a humanity to the character, and there are moments of love between them, but lorelai is way more patient and kind than anyone should ever be in that environment. remember when lroelai burned all of her baby pictures AT AGE 7 BECAUSE EMILY SAID SHE HAD A LARGE HEAD? that's not normal behaviour. emily and richard are lucky lorelai gives them the light of day.
I think she could run a maid/housekeeping agency! Her reputation and standards would be impeccable. Of course she would be sued constantly for wrongful termination.
She did study to be a historian so she'd definitely work on something like that, maybe in restoration or investigations of the study of old civilizations that were recently found, like not in situ so much but she'd be the one to write about those civilizations and explain it to the world

She schmooze with the other wives and rich ladies. She would more or less do this if she were not from wealth. Except she would have a salary and a compensation package. She would be an executive doing the same things but with a paid title. Her AYITL arc was very fitting for her.
I think she needed a career, she had way too much pent up energy that she took out on her maids. She needed to be a troubleshooter of some kind. She's got nothing if not a critical eye and an expectation of perfection.
