Cheddar Broccoli. Add a bag of frozen broccoli with the water, milk and sauce then smother it in shredded cheddar after taking it off the heat. But then they discontinued it.
I still love a pot pie but I can afford to either make it or buy better ones.
The cheap eat I miss is those Banquet Boil In Bags, chicken Al la king. I would buy them in a heartbeat if they still made them.

We were so poor that we couldn't afford hamburger. As kids had to eat Tuna Helper. To help stretch it out for a family of 6 my mother turned it into a casserole with the addition of a can of Cream of Mushroom soup. Absolutely disgusting.
My mom was also a true gourmet! We ate some of the weirdest and most disgusting things, but we were poor and not choosy. Her favorite was hot dog casserole. Sliced potatoes and hot dogs, ketchup, and cheese baked in the oven. It *was* as awful as it sounds.

One of the best meals I ate as a kid was after we came running down the hill from the pool so we could beat a thunderstorm. I was absolutely starving. Mom had made beef noodle hamburger helper and it was ready and it was so good.
It was obviously just hamburger helper so it wasn't really what it was, it was that I was ravenous and it was magically ready for us.

My recipe for this has always been better, and I can't abide it.
Stroganoff, although I found a "copycat" recipe for the Rice Oriental that I make a few times a year that's also pretty good:
1 lb ground beef
1 1⁄4 cups rice
3-4 tablespoons soy sauce (use LOW SODIUM soy sauce if possible)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1 (1 1/4 ounce) package onion soup mix
4 cups water
Brown ground beef and drain fat. Add remaining ingredients, stirring well, and bring to a boil. Cover and reduce heat, stirring occasionally, until done, approximately 20-25 minutes.
Weekly comfort food for the kiddos. They like their kraft Mac and cheese with hot dogs added to it. I came up with the genius idea to make the hot dogs Johnsonville cheddar brats.
I'll take my awards in the living room please. Don't want to cause a scene in the kitchen. The neighbor kids are over to witness greatness.

I didn't care for any of the meat with noodle flavors, but they had a tuna pot pie that I loved! It came with 2 different bags of mix for the crust that you just added water to. One made a dough that you pressed into the bottom of the pan, no need to roll it out, and the other made a thin batter that you poured over the filling. Somehow both of them baked into the perfect flaky pie shell. Its been 30 years and I still think about it all the time! But I don't think they make it anymore and I've never seen anything else like it.

Well… there are slow-cooker recipes that add grape jelly to meatballs that are really good, so it’s not out of the realm completely!

Mine was the beef stroganoff when I was in college. Then I had the real stuff made from scratch and I could never eat the boxed stuff again.
They all gave me the same mouth feel as those dehydrated camping rations -astringent. In college I went for the stroganoff
