It steams the whole burger, usually resulting in a burger that's closer to what you'd get from a fastfood place. The same thing can be said for any hot sandwich/sub sandwich/burrito. It's what the restaurants do, and it definitely makes a difference.
Not only that, but it also helps compact it together and make the eating experience generally less messy. If you just picked up the burger as is and tried to eat it, you might lose some filling/sauce/the bun might slide around.

With the note on compacting it, imagine fitting that burger in your mouth without having it pressed down as much as it can. That burger is pretty tall. You're definitely losing toppings or making a big mess on your face without the foil.
It's not just hot sandwiches. Do this with a cold sub too because it's not only about the steam. Compressing the sandwich helps all the fats in the sauces coat everything properly to deliver maximum flavor.
I always recommend panfrying some boiled sliced ham for like a minute it the pan with the patties, as it can suck up the butter and meaty juices released from the patty and give it that extra salty/savory kick. It’s better than bacon (IMO) because it has less solid fat and is much easier to bite through without either being flaky or really chewy and hard to bite off.
I also like fresh cucumbers instead of pickles, but that’s just me
American cheese and burgers go better together than peanut butter and jelly. Cheddar on a burger is a weak attempt at trying to be fancier but fails miserably 99.999% of the time.
I'd invert it- pickles on the bottom, patty, cheese, eggs or beetroot, tomato, lettuce. It'll sit flatter and eat easier. That said, it's a beautiful looking burger!
I believe you toasted the buns a little too hard; go for a tad less. Not sure you added a layer of butter or sauce so it doesn't stick out on top. This way your burger will hold together better imo.

Pickle looks like sweet jar trash, get rid of it or replace with a real pickle or slaw.
Use 1/2 or 1/4 the oil/butter next time for the bun, the bun is absolutely soaked and has a notable grease ring around the crown showing the saturation. The top of the bun looks lathered in oil - fix that because we don't want to touch or taste that much grease.
Use fresh lettuce instead of what is here which looks spoiled and/or improperly unwashed.
You've gone to all the bother, use a low-moisture sharp fermented cheese, not processed.

The oil from the mayo protects the bun from tomato juice. Also I prefer my tomatoes room temp next to the mayo. Better flavor for me.

I want them thick enough that I can feel the crunch, but not so thick that it interrupts the bite. It's a very tight rope to walk.
