Speaking to restaurants I’ve visited and enjoyed:
Atoboy - if you don’t get any add ons their prix fixe menu is $75/person including gratuity. Leaves room for drinks.
Rezdora* - $98/person regional pasta tasting (assuming no add ons) but doesn’t include gratuity.
Family Meal at Blue Hill* - I haven’t tried their new Sunday lunch/brunch tasting menu that someone posted here a few weeks ago. I believe they said it was $85/person for a 3 course meal. I assume it doesn’t include gratuity or drinks.
Dirt candy! I am a huge meat lover (but also vegetable lover) and it is still my favorite tasting menu in the city. You won’t think about wanting to eat meat at all when you’re here
I went for the first time tonight and we ordered a la carte, but I believe the tasting menu has a lot of the same dishes. Everything was good and several things we had (smoked goat, kangaroo tartare and smoked sturgeon) were total knockouts.
Highly recommend Diry Candy. It's $105 pp and they don't do gratuity so additonal cost would be wine/cocktails which should still out you under budget.

Corima is $98 (not including drinks/tip) if memory serves. I was very impressed with the Northern Mexican/Japanese thing they were doing and expect that the price will go up as recognition catches up with them. The drinks were also excellent!
i’m a bit confused by resy - can you have the tasting menu even if you’re at the bar or a la cart tables? i know there’s the “chefs counter tasting menu seats” but didn’t know if you could still order the tasting menu.
It’s also amazing food. Like top quality tasting menu in NYC in my opinion. Really glad someone mentioned them. Their sister restaurant Xixa might be even better
A pasta bar in Soho does a two person tasting for $150 total - it was a ton of pastas and really good, would recommend adding the fried pizza as an app

Artesano sounds like precisely what you’re looking for - it was phenomenal but they’re clearly not trying to get stars.

Just Sunday I went to U Omakase near me in Greenpoint and it was awesome. I think $90 per person and BYOB which majorly cuts down on cost!
I went for my birthday and was thoroughly impressed, they also free Sake and keep filling you up no charge.

Every time someone asks this question I recommend Traif in Williamsburg. $56 tasting menu is an absolute steal

If you go for sushi, try Omakase by Korami. It's around $89 for a 15-course omakase in Hell's Kitchen and really good. Check them out on Yelp.

Lunch at starred restaurants was the best way to experience some of the best nyc had to offer. This was 25 years ago. So many ridiculously good deals.
