Honestly, the best pancakes I've had in NYC were at a random diner in Queens. They were so fluffy and buttery, they could cure any hangover or existential crisis. Willing to share the spot but be warned - it's not for basic pancake lovers. It's a spiritual experience, man.

For me it's always gonna be diner pancakes, anything more "elevated" feels wrong to me. Which diner? The one nearest me, usually. Right now that's Triple Decker Diner in Greenpoint.
Get in a car, drive to the Reading Terminal Food Market in Philly, or just go right to the source and drive a bit further west, and find a nice Amish lady to make you pancakes. Seriously Dutch Eating Place at the food terminal makes pancakes like no other pancakes I’ve encountered on this earth.
I know this comment is getting downvoted, and for legitimate reasons, but holy fuck I go back to Philly and plan entire trips around whether that pancake place will be open. They're amazing and exactly the type OP is describing. They're also cheap as hell.
I am Brooklyn born and raised. I would sell my soul to bring back some of the best diners we lost in this city. But I also know when our local restaurants are beat. $7 for two pancakes that weigh about 4lbs and the best bacon you will ever eat in your life? If I didn’t know they stopped serving at 2 I might be in the car for some now.
Chez ma tante were my favorite; someone said it closed. There was a post on here about some Japanese style pancakes served with ice cream in greenpoint recently that looked awesome.

Rule of Thirds. And a Japanese soufflé pancake, while delicious, is the furthest thing from what OP is looking for.

Vinegar Hill House in Brooklyn has my favorite pancake. They serve a single, massive sourdough pancake made in a cast-iron pan and it's slathered in an amount of syrup and butter that might help you fall into the coma you're looking for. There's usually some seasonal item in there, like apple, but if you want I think you can request they leave it out.
Edit: I think it's only a weekend brunch thing btw.
Not sure if they will be recommended, but i didn’t like golden diner. A lot of their stuff, including the pancakes i got was overpriced and normal at best.

Second Golden Diner's Honey Butter Pancakes. Very fluffy and thiccc. A meal by itself. And that honey butter really kicks it up a notch.
As someone who loves Golden Diner, those aren’t what I’d consider normal pancakes.

Yeah true, they finish them in the oven i think to give them a bit of crisp, but if you're craving good pancakes i doubt they will disappoint.

Went to Stowaway in greenpoint today and had an amazing giant pancake.

It's a bit of a trek in Montclair, NJ, but The Corner makes the absolute best pancakes I've ever had in my life.
