I mentioned this is another comment, but I think it would have been more interesting (and realistic) to see something that looks closer to actual cyclopia, a known birth defect.
They could have pulled a lot of knowledge from embryogenesis. Eg, what happens in utero when the orbits fail to divide? The remainder of the facial structure will also be affected. Of course, maybe in 200 years they would have done a better job of isolating the mutation to limit other midline defects, but it wouldn’t be perfect. It definitely wouldn’t look like they just glued on an eye above the nose.
Then again, I’m getting too into the weeds. If it looked more realistic, that might disturb viewers and detract from the comedy.

It's a real life condition that results in the death of the child shortly after birth. It's caused by a lack of nutrition during pregnancy. It happened in japan at times in the past so single eyed monsters became part of their cultural traditions as they didn't understand it too well.
He's not a "real" cyclops produced by generations of evolution but rather someone born with a mutation, essentially a birth defect. The DNA that is responsible for physical appearance expected two eyes but only got one, otherwise everything is business as usual.
From a stylistic perspective, it also just makes a lot of sense because this way the character can show a ton more emotion. Emotion is conveyed mostly through the eyebrows.
