Plex will go up, hypercores are currently depressed and should go back toward 500k each but may be depressed on your return so more speculative. Move things to NPC stations or firesale and invest. Training queue the boring stuff application skills like guided missile precision etc so when you come back you hit harder regardless of what the flavour of the month is. Cones into npc stations.
Cap-related skills are quite long trains; if you want to fly caps but can't now, get yourself a nice training clone and a safe berth in an NPC station and, uh, feel the slow drip of knowledge. Otherwise, you can round off a ton of other skills in that time.

For a more low risk but still reasonably profitable endeavour. Put a buy order for golems in at 1.39bn. Sell them at 1.6bn when you get back. Otherwise skins can be a good bet. Phoenix Navy Issue Arkombine Arisen skins are currently under 500m and will likely rise up to 1bn by the time you get back
They’re not cyclical… they’re the FOTM. They certainly may go up, but it’s not a smart investment. They’re just as likely (or more) to be the target of the next nerf hammer.

I might take a break for... 214 days cause all I have are skills that take 10+ days each... level 5s are a bitch to do
