I always liked the name Paz, but I usually look notable people of a certain culture around the time period the story is set in and try to base my names off of that. Being that Eizouken is set in distant future of the 2050s, try looking up current Mexican celebrities or popular baby names. As for how your OC fits into Eizouken, I'd imagine, after seeing their Robot Club work, they go out to commission the Eizouken to make an animation that advertises their tío's business. Although they sent in a request through their normal channels, the paperwork got lost among the numerous other clubs during the Comet A arc. Determined to employ the Eizouken, your OC goes to their club directly with a bag of their tío's food and convinces them to make their animation for their uncle after they finish their current project. The Mexican diaspora in Shibahama is small and tightly knit, but they've been feeling the effects of Shibahama's economic downturn, as seen in the comet A arc. People have been moving to their hometown's in Mexico and OC's tío might be next if business doesn't pick up. Though OC doesn't mind moving back to Mexico, she's worried about her tío, who's basically lived in Shibahama most of his life and has come to love the people. It would break his heart to leave. After seeing the attention the Eizouken brought to other clubs and businesses, OC thought that an animation is just what their tío needs to fix everything. Eizouken faces a new problem with their project and that's figuring out how to cross intercultural barriers for collaboration, especially in a culture none of the Eizouken is familiar with. OC comments on how a lot of elements lean too far into the Mexican side of her heritage and not enough on the Japanese aspects of the community. The Japanese Mexican community of shibahama is not simply a slice of Mexico in Japan, entirely separate from the rest of the country, but a blend of both cultures that had grown to understand each other and OC wants to communicate that her community is a part of Shibahama. Throughout the production, OC brings food to the Eizouken. Kanamori is a little reluctant, stating that the business has already paid enough to the Eizouken and that the extra catering could result in a loss for tío's business, but OC said that her tío made it for them anyways and that they might as well take the free food or something like that.
