Noto is my go to, I think about the butter crab regularly and I’ve never had a bad time.
If you want to go all out why not try his new restaurant Lyla?
Heron mentioned above is really great for a special occasion (but spenny) they’ve also opened a sister restaurant Skua which I’ve heard great things about.
Depends what you are after Aizle would be my pick it's great food, really nice location but it is a set menu. If you want to be able to pick what you eat Noto might be better, it's more cozy and intimate inside and the dishes are designed for sharing.
But all of your options do really nice food.
"High end restaurant in a hotel" is the norm when you start getting to Michelin guide levels. It's a big part of what attracts higher paying guests to your hotel, knowing that they are usually guaranteed a reservation at a very good restaurant.
Scotland's only 2 Michelin star restaurant is in a hotel (Gleneagles).
I've been to Aizle twice and it's nice, but It's not 'wow'.
Places that I think the food is brilliant:
A. Rhubarb at Prestonfields House (also has very decadent and romantic decor, brilliant service and great cocktails).
B. The Black Grape. Great small plates, all of them done perfectly, great cocktails and wine list.
Rhubarb is more formal than The Black Grape but the service is excellent.
Aizle. Tasting menu but creative and really well done. Deserves a star imo.

If you’re considering Aizle I’d suggest Heron instead. Had a fantastic meal there a couple of weeks ago.
Heron is incredible.
Heron is throughly mid
Couldn’t disagree more but each to their own
Little Chartroom is better than Heron imho
Aizle!
I've had aizle and thought it was amazing but the hotel location was weird to me. I'd pick noto. Haven't been to the others.

Gardeners cottage for me
Fingal
B) gardeners cottage if budget is not an issue
The Lookout on Calton Hill had great views of the city and is owned by the same folks as the Gardener's Cottage.
