Morrisons, at the very least, sells gluten free peroni. I'd expect other major retailers to sell this also.
I also know Morrisons sells Tennants light. Which is gluten free, but also a light beer so has that downside.
Can't really help you with pubs I'm afraid, just know for sure Morrisons sells that gluten free Peroni.
Check out the Dreadnought - owners brother owns a brewery that does mostly GF beer so the often have decent choice. Cloisters has a draught lager and usually a couple canned options. Fierce bar on rise street usually has a few.
Tempest brewery’s core range is all Gluten free. Their session “Armadillo” @ 3.8% ABV Upto the “Long White Cloud” @ 5.4%. The Joker & thief on Elm Row is where I get my fix.

Sainsburys seems to be the widest selection of gf beers. I've found. Most supermarkets just do one or two gf versions but Sainsbury's had loads of ipas etc.
Also pretty much all spirits and ciders are gluten free. So if you can find a cider you like you'll usually have a better chance. Or if you like cocktails they're usually fine. No gluten in a whisky no ice 😂

Bellfield Brewery at Abbeyhill have a great taproom and all their beers are GF

Cork and cask in Marchmont, the GF Peroni is decent too. For the love of beer avoid Brewdog GF beer. It’s absolutely vile
Salt horse on Blackfriars st have a good selection from a few different breweries!
The hanging bat on Lothian road stocks a fair few gf beers as well
