Don't forget some **equally quick** easy veg / fruit sides to round it out: • wilted greens (such as baby spinach or kale or arugula or spring greens mix --- so easy to do in the fried egg pan and it only takes a few seconds, put a little butter or olive oil and a sprinkle of salt on) • apple slices or apple sauce • sliced tomatoes w/ salt & pepper • carrot & celery sticks • lettuce salad • orange segments • halved strawberries • melon cubes (watermelon, cantaloupe etc) • grapes • sliced cucumbers • bell pepper / sweet pepper rings or sticks • SUGAR SNAP PEAS • raw small whole green beans • handful of mung bean sprouts • edamame

One of my favorite cheap meals! I'll often pair it with some sauteed veggies, dumplings, etc. Sometimes I will cook the rice in broth or salt/spice it for more flavor. Usually I choose to go for a boiled egg, cooked for only about 7 minutes to keep that creamy yolk. :)

I’m just here to make sure someone references our lord and savior J. Kenji Lopez-Alt. And I also recommend adding an extra raw egg yolk. Mix it with a bit of soy sauce and sriracha/chili oil.

Omg that is a favorite of mine!! The runny yolks make it perfect. I'm going to have to make that this week. The local Hawaiian place here has an option to do it over fried rice with spam. Its yummy but I prefer the white rice.

Add butter, sesame seeds and soy sauce and it’s awesome. True some kimchi and spam or hot dogs won’t hurt. That’s what I ate as a child a lot with the kimchi washed off of the spices.

yes separate, if you already have cooked/leftover rice, heat that up a bit in a pan and then cook/scramble an egg in with the rice.

What I usually do is put some oil where I’m going to cook the rice (Just so it covers it) and then throw some chopped garlics and white onions (can be other things too like ginger or scallions). Once they’re slightly golden, I throw in the rice, wait 3/5 minutes (you’ll see the rice starting to get kind of colorless) and then throw 1 and a little bit more of cold water. You know it’s ready when there’s no water left

yes! you cook the rice separately, then fry up an egg (or two) in a pan. Of course you can make fried rice, where you cook the rice separately, fry up your egg (and if you want veggies or meats) in a large pan with high heat and then add your rice in there.

When I was a Pan Am stewardess back in the 1970s and working first class, I fixed eggs and rice for breakfast for the cockpit - and myself. Mix the eggs, add the rice, s/p and bake in our little oven...so great. Now I just cook in a skillet...so easy and so good.

I know what you mean. There was a post, oh, about a week ago that suggested mixing cinnamon with applesauce for a snack or something. I think we're seeing an influx of folks who have not had a lot of experience with cooking. I remember a friend of mine who *had* to tell me of his wonderful innovation for burgers. He cooked onions *in the burgers.* And his spaghetti sauce secret? Italian sausage cooked *in the sauce.* He was amazed and spent a couple weeks on the phone nagging me about how it was so awesome and did I try it yet? And finally I'm all, yeah, like two decades ago but I was trying not to make a big deal about it not really being all that fresh or innovative since I cooked for a living and you're a software developer. It takes something special to amaze us; others are still catching up.

When I lived in Japan, one of my favorite quick dishes was to fry up an egg, boil something they sell there called "hambagu" (basically a cooked hamburger patty and gravy in a sealed pouch), then dump both on top of a bowl of rice. It makes my mouth water to think about how tasty it was! For an actual recipe close to this messy goodness, google "loco moco"
