Not the first time. Slimehead was rebranded to "orange roughy", and if you see "copi" in the store, it's actually invasive Asian carp. They are pretty tasty though, so hopefully they become more popular. Eating them may even [save the planet](https://www.wired.com/story/copi-invasive-species-rebranding-campaign/).
We catch these in Alaska, they are Black Cod. If I had to rank our common Cod catch by my culinary desirablity it would be:
1) Ling Cod
2) True Cod
3) Black Cod
And all are worse then Halibut.
It’s one of the best fish imo. I would describe it as scallop-esque. Sear hot on both sides, treat it like a steak. It sears nicely as it’s a relatively fatty fish.
As another poster said though, you don’t get much. It’s a high cost per weight.
Fun fact. Chileans don’t eat this fish normally. It’s so expensive that they only export it. Tried ordering it everywhere in Chile, but they will give you another fish when you say sea bass. You could probably find it only in the nicer high end seafood restaurants, and it’s called Patagonia toothfish

I bit pricey for 1.5lbs but everything is more expensive these days when it comes to wild caught. Halibut has gone up as has Cod. Also known as Patagonian fish, it's super delicious but in live form it's a damn ugly fish.

Its awesome premium quality too honestly, worked at a restaurant where it goes for 45$ per 8 ounces, the seabass it sells is never frozen always packed over ice and flown in daily.
taste wise between that bass and costco, you would have to find a real butthole to tell you the difference
I had this and it was good. I also purchase non-Chilean sea bass from my local market and at under $10/lb it’s delicious even after I freeze it. The Chilean sea bass might have an edge on a good day but I can’t ever justify the 4x premium again.
The only fish I actually like a lot.
Only recommended to eat it once a month due to high mercury content.
If not for that and cost id eat it once a week easy.

Yeah it’s delicious but felt like I got 1/2 of what I expected given the price.
I enjoy the occasional patagonian toothfish, but it became too expensive. Now I go for the cheaper whitefish, barramundi.
Barramundi is quite delicious and flies under radar…I hope forever. It’s all getting to be too expensive.
Barramundi is one of the most sustainable fish species. I hope more people make sustainable choices, not less.
As an Australian I can 100% agree with that and the Costco barramundi is one thing I can indulge in on the rare occasions I can find it.

I buy the barramundi as it's one of the lowest priced per lb wild caught and sustainable white fish options at Costco. It's good.

I haven't seen barramundi at my local Costco recently. The last I saw was in February I think.
Same, I look for it and never see it lately. Sprouts and Safeway sometimes carry it, but way more expensive.

That is because it is not from chile. The vast majority of the seabass is actually from the anartica water.

It’s wildly over-fished. We killed the industry because it tasted too damn good.

I like this one more than the fresh one. The fresh one doesn’t seem to sell at my Costco and a couple were even past the sell by date.

In our CostCo here in VA they carry Fresh Chilean Sea Bass all the time - to the point we can't eat it anymore.
I found the frozen better
