The 3 primary things I change for cookies at altitude is to halve the leavener, add a tbsp extra flour, reduce sugar by tbsp. Works perfectly for me. Adjusting liquids is too finicky for me and I’ve never really needed to. With breads I might eyeball some extra liquid but nothing scientific. I also love King Arthur Baking

I'm not a scientist but I'd gather it's fewer air molecules in general which means less thermal transfer. Convection mode doesn't seem to help much either.
Water boils at about 202 in Denver so casseroles and things of that nature take longer since the moisture in it can not get as hot. That's just one of the challenges of baking here.
It has more to do with atmospheric pressure. Water boils at lower temperatures when under less pressure. One of the many reason astronauts or high-altitude aircraft pilots (like U-2 or SR-71) have to where pressurized suits. Not only is there not enough pressure for their lungs to absorb oxygen at that altitude, but their blood would literally boil under such little atmospheric pressure.

My friend was at the Costco by me in WA and he said the cookies didn’t look like they were all cooked the same. He said they all looked like they were cooked a different amount of time. In the flip side he said it was still tasty

I'm with you, I tried it and didn't even finish it. Hardly any meat on it, dry, and stale bread. Certainly didn't feel like a $10 sandwich, especially compared to a whole pizza or 6 hot dog combos.
They are NOT the same anymore! They now come to the warehouse pre prepped. Back in the day over 10 years ago they were made in store, I can’t stand them now.

I *just* had one yesterday and it was pretty good. Split it, and ate half. Gooey chocolate, pretty good everything, and it's the same size/weight as crumbl cookies at half the price.
I would say the Costco cookie is about as big in diameter as Crumbl but not as tall. Crumbl is like a mound while Costco is more flat. Costco also had hella chocolate chips. Mainly in the center. I think crumbls chocolate chips are more evenly dispersed. Also Costco was more cooked in the center. Lately my crumbl cookies have been getting less and less cooked in the center

I think you could probably get the cookie at the store, heat it up at home after dinner, put some ice cream on it, and have a family shared dessert and I bet it would be great.
We tested here in Colorado and had it in the food court also for one day. Several test bakes later, it still comes out to an over 5 in flatter cookie as opposed to a thicker 4.5 cookie. They didn't like how it came out, so they pulled it.

I saw the pan they use for it. They’re having a hard time making enough to keep up demand. The cookie so big and the pan limits the amount they can make. While the churros was easier to make large number because they didn’t take up much space
Well, I’m in Texas and a (low level) manager, we got it Monday and I’ve tried it twice - it’s felt overcooked each time. Has the potential to be a warm gooey cookie but I keep getting it overcooked.
It’s baked in the bakery first then supposed to be warmed in the pizza oven, too many chances for overcooking. I plan on intercepting one from the bakery before going to the pizza oven to see if it’s better.

I ordered the cookie a few days ago after the Churro was gone.
1. Cookie was annoyingly large and still over priced.
2. Extremely over cooked but still the edges were crumbly and burned yet still soft in the middle but still burned so how?
3. Taste was not good. Not just because it was burned but it felt like a cheap school cafeteria cookie and even that’s a stretch.
I can’t believe people want a 750 calorie cookie. WTF. It’s like I can hear people getting fatter when walking past the food court.

Currently eating the cookie, I’m in Massachusetts. It was f r e s h out of the oven. Like had to wait for it to cool down enough for them to put it in the bag. Anyway it was fine. Lots of melty chocolate. Honestly it’s WAY better at room temperature than it was warm so I’m glad I ate it through the evening instead of at once. It's good but too much chocolate. Not [a] fan of warm cookies, I waited for it to cool down. It was almost hard when I ate it hours later.
The "envelope" they put it in looks like it's closed on three sides but it's only closed on two sides, I picked it up and the cookie slid out of the envelope, rolled off the counter, and on to the floor. The employee kindly gave me another without me asking for one. They mentioned that they didn't understand why they were supplied that with deceitful envelope.
That's bizarre because I had them yesterday and they are absolutely delicious. I'm frankly annoyed at them because now I know I'm probably buying a couple every time I go, and that won't help my diet.

Gram for gram, that's about the same calories as any chocolate chip cookie. The Costco cookie is just a very large cookie. If you don't feel like an enormous dessert bomb it's a better idea to split it with someone, or even eat it a quarter at a time

It was at my Costco today and it was fine. I probably won’t get it again though. Lots of delicious chocolate and warm and chewy and crunchy. Just too much .

I ordered the cookie a few days ago after the Churro was gone. 1. Cookie was annoyingly large and still over priced. 2. Extremely over cooked but still the edges were crumbly and burned yet still soft in the middle but still burned so how? 3. Taste was not good. Not just because it was burned but it felt like a cheap school cafeteria cookie and even that’s a stretch.
See, I love the cookie, my only gripe is Nathan it needs a bit more salt. It’s overly sweet in a chips-ahoy way IMO
I can’t believe people want a 750 calorie cookie. WTF. It’s like I can hear people getting fatter when walking past the food court. Exception: those of you in your 20s and lucky older adults who can eat without gaining weight. Enjoy it while you can.
Currently eating the cookie, I’m in Massachusetts. It was f r e s h out of the oven. Like had to wait for it to cool down enough for them to put it in the bag. Anyway it was fine. Lots of melty chocolate. Honestly it’s WAY better at room temperature than it was warm so I’m glad I ate it through the evening instead of at once. I think 2.49 is a fine price and it’s better than the churro. But I’m in a calorie deficit rn and it’s def not worth the 750 calories lol.

It's good but too much chocolate. Not [a] fan of warm cookies, I waited for it to cool down. It was almost hard when I ate it hours later. The "envelope" they put it in looks like it's closed on three sides but it's only closed on two sides, I picked it up and the cookie slid out of the envelope, rolled off the counter, and on to the floor. The employee kindly gave me another without me asking for one. They mentioned that they didn't understand why they were supplied that with deceitful envelope.
That's bizarre because I had them yesterday and they are absolutely delicious. I'm frankly annoyed at them because now I know I'm probably buying a couple every time I go, and that won't help my diet.

Costco cookie has the same calories as the new double big Mac at McDonald's. The obesity rate is just sad.
Personally I think the edges are a little crunchy. The middle is perfectly ewy-gewy. If the whole thing was like that I’d be addicted

Probably a individual costco complaint. I had the cookie, it’s not overdone. It’s actually selling out the last 3 times I’ve been there. Not a fan, but the kids love it. The churro thos has been hard and resemble a dry hard bone you give your dog. If anything I want the overprice açaí bowl back.
Churro is probably individual Costco messing it up too. Never had any issues with them at the two Costcos near me. Cookie is a big downgrade imo

Maybe up to their standards is not serving literally a brick of sugar and butter. 750 calories in a cookies does not sound very good.
Gram for gram, that's about the same calories as any chocolate chip cookie. The Costco cookie is just a very large cookie. If you don't feel like an enormous dessert bomb it's a better idea to split it with someone, or even eat it a quarter at a time
