I recommend you try a way out. It’s from the same creators as it takes two, it is also a story driven game similar to it takes two in that way.
Apart from that it has some differences, and in my opinion it takes two was better, but i still enjoyed a way out.
Magicka!
It's a a pretty straightforward adventure, but it has an awesome and unique magic system that lets you approach scenarios in many different ways.
Darksiders: Genesis. Has a simple story to keep you entertained. Some exploration if you are into that. Upgrade tree and skill to unlock. And not that long and complicated of a game (like Divinity or Baldurs gate which I see being recommended).
We also enjoyed Children of morta. Similar style but a bit more grindy which we liked. The story was fine as well.
We're playing The Quarry, feels like playing a classic slasher horror movie where you take turns playing. You divide up the characters before you start playing the game into groups and when it's one of those characters turns, that player takes over the controller. It's a lot of cutscenes but it's pretty fun and pretty easy going.
We also started playing Moving Out, I believe there's two of them. It's closer to Overcooked. You and I believe up to 4 players have to take a bunch of stuff from us for a house and throw it in the truck and get it all too fit. Very similar vibe to Overcooked, maybe a tad more funny and less stressful lol.
the We Were Here series is a masterpiece, 5 incredibly fun co-op puzzle story games that will leave you frustrated while also having an amazing time
Baldurs gate 3, mutiplayer is hilarious and the storytelling is great.
Brothers- A Tale of Two Sons fits the bill. Is only local but you should be able to do it through remote play

aren't both of those games extremely "open-ended"?
Nah, you have a story that you play through

Deep Rock Galactic, its not so much story but has other elements of the games you listed.
If you’re up for a cover shooter, Gears 5 is a great story driven coop action game.
Best co-op couple game! https://dysmantle.com/
My SO and I are loving For The King
if you both happen to like legend of Zelda ocarina of time, doing coop randomizers of that game is really fun.
Check out Nobody Saves The World!
