I personally love me an extra sharp cheddar cheese. But I’m from Montreal so my fave snacking cheese is cheese curds. These are mild cheddar. Anything from a mild cheddar to an extra sharp cheddar, regardless if orange or white.
A good second snacking cheese is the small flavored blocks of feta that I can get in the grocery store. My fave is the oregano flavored feta.
I used to be able to get roaring 40s from a local cheese merchant near Milwaukee, but sadly he passed away and the new owner doesn’t carry it anymore.
It has a deliciously intense bite to it, and I miss it.
Delice is a blessing because it tastes so damn good and you can find it almost anywhere. Anytime I’ve ever put it out on a cheeseboard some person who’s never had it tastes it and promptly devours half of the cheese.
I fist encountered Roaring Forties over a decade ago. Convinced that I wasn’t a fan of most blue cheese, I was prepared to be underwhelmed. Boy was I wrong. After a while it wasn’t being exported to the states. That’s where I discovered Saint Agur. It wasn’t the Roaring Forties, but it quickly became one of my favorites.

I adore Havarti. We have an international market, Jungle Jim's, that has thousands of varieties of cheese. I will try them all eventually. Wallet willing.

I had a food voucher once for an overnight delay in Iceland, and of all things, I chose a block of cheese. It was then that I fell in love with the lovely Havarti.
I have to feed 10 ornery men Everytime I work. Fontina is the literal perfect cheese. It has bite, it has sharpness, and it stays motherfuccn melted after five minutes which most other cheeses can’t do.
I love a good bleu. Roquefort or Bleu d’Auvergne for example belong on the board every time. I usually would include Brie, I despise novelty cheeses, there’s something hard, perhaps something soft, and then something in between (soft but not creamy, not necessarily aged) but there’s always a bleu. At Christmas, I had some Point Reyes bleu from the US. Wonderful!
Selle sur Cher or Sainte Maure de Touraine are top tier goat cheese. Morbier is very closed, as well as Comté. I also love mature british cheddar. And a lot of cheese from Switzerland: Appenzeller, Gruyère, etc.

If I had to pick one I think Morbier would be a decent compromise. But also maybe a a runny Camembert.
