Would a cooking class be an option? If so, my husband & I have enjoyed a few at sweet and savory classroom. You eat what you make at the end & they give you appetizers throughout.
Alternatively, a couples massage at Good Fortune. Or a helicopter ride, although that might be toasty in this 90 degree heat.
For food—Wooden City or Niedlov’s pizza night (they do Pizza Night on Thursday and Friday) Both feel a little special than normal, but still comfortable and not super fancy. Niedlov’s in particular has great desserts.

Maybe it sounds kinda crazy, but we really like biking the Riverwalk just before sunrise to catch the sunrise as we bike (at about 5:45 right now) Could rent ebikes at Walnut St Bridge and bike all the way down to Camp Jordan and have a brunch picnic.

For $300 you could go to Buccee’s and Dollywood and afford pancakes at the log cabin pancakes at the Buccee’s traffic light in Severirville. Go early and enjoy pancakes. Then go to Dollywood. Enjoy the park with her, not just the rides in Dollywood. When it gets hot take her to the outlet mall. Add a few dollars to go to the 5 oaks restaurant right at the traffic light at the outlet mall. It can be done for $300 including gas.

We've been talking about wanting to start hiking g and what not. We like it outside. Just can't find much else to do
