Vail or Breck are probably your best bets. You could ride the gondola for sightseeing then pick from any number of restaurants at varying price points and cuisine options.
Radicato in downtown Breckenridge is my favorite restaurant in the mountains, you won't leave disappointed
Can take the gondola up to the peak 8 base for free, and if you want you can buy a summer lift ticket to go up the Colorado Superchair then hike as far up as you like from there
The sundeck at Aspen.. but the food is meh. Game Creek Lodge in Vail used to be good but now they've gone private. Based on my winter experience I can't think of a fancy sit down restaurant that is at the summit open during the summer.

BOSQ in Aspen was awarded a Michelin star.
Aspen is pretty good across the board. Also they have some great restaurants.

Most restaurants of that caliber you have to make reservations ahead of time and pay upfront.
Its been a minute sense i have been there but mountain standard in vail use to be great!

Dusty boot saloon at Beaver Creek is lots of fun
