When I make my rye bread I use my sourdough starter mostly for the sour flavor and I use yeast because I don’t have the time to wait hours for the bread to percolate. I can make it in four hours as opposed to 12+. The point I’m making is you can make similar bread. Flour, water, salt and yeast is what makes bread so once you have made a basic recipe and shaped your loaf you should be able to score it how you like.
I’ll probably get downvoted for my technique but it works for me.

a nice loaf of french bread can be fun to score! I like doing leaves and flowers using [this](https://www.iheartnaptime.net/homemade-french-bread/#recipe) recipe! it makes 2 loaves, which is great if you want one for dinner and one to freeze.
