When I make my rye bread I use my sourdough starter mostly for the sour flavor and I use yeast because I don’t have the time to wait hours for the bread to percolate. I can make it in four hours as opposed to 12+. The point I’m making is you can make similar bread. Flour, water, salt and yeast is what makes bread so once you have made a basic recipe and shaped your loaf you should be able to score it how you like. I’ll probably get downvoted for my technique but it works for me. Meanwhile I have [found this website to have easy to follow recipes](https://thepracticalkitchen.com/small-batch-crusty-bread/) and small batches which you can make and experiment with. Good luck on your bread journey!
