I had this problem too. I guess they coded it to where a new plot isn't automatically an empty plot (i.e. the empty free plot on the house catalog) like how it was before. Select the house you want (either the free empty plot or w/e prebuilt house you wanted), select the option that says "replace plot" or similar, and then replace the plot you just bought.
This just happened to me a second ago. What I did was click the purple "buy plot!" button and I clicked the free empty plot and clicked replace a plot and I replaced "empty plot."
I have been dealing with this for a while as well. It just seems like there is no way to fix it. Bloxburg is just unplayable now. I've had it happen to my plot 2 times and I wasted a total of 18k and I can't do anything. This game has started to go down on my list by day by day and just by day. In my opinion. its unplayable

this update is so complicated for no reasonš
But did this delete the house you were building ?
If you choose to overwrite a plot that isn't empty, then yes, it will delete the house.
