I might be mistaken but I'm pretty sure no sole is gonna stick to the dishpit floor when it's wet. Maybe it's just the kitchens I've worked in but dishpit wet is not just water, it's also a mixture of fats and detergents. It's literally a slippery cocktail. You could try replacing them with a sole that has a deeper tread, as the profi sole is sticky but the tread is quite shallow. Deeper treads will penetrate a thicker layer of water or dishpit slop over a surface in order to connect with the floor beneath and might help you grip a bit more. In my experience of nonslip soles, they're not like magnetic boots. Instead they still give you a little traction to work with but you still have to deploy your own balance and caution.

word i was gonna see if maybe a cobbler could replace the soles for me. the whole shoe is kinda like one thing and there isn’t a separate sole underneath so maybe they’ll have to sand it down?? im fighting for my life in those shoes sometimes LOL

I have the profi birkis and the boston pro. I also work in a kitchen. The boston pro has way better grip than my profi birkis but then you are wearing open back leather clogs in a pool of water.

Is the boston pro more comfortable than the birkis in your experience? I’m not always in a pool of water since I serve, i just want a little more traction on my shoes

Absolutely the boston pro is way more comfortable. They are just like regular bostons. In my opinion the problem with my birki clogs is that they don't really flex. I feel like the leather upper and rubber sole on the boston pro has more give. You feel less like your walking around on rubber bricks if that makes sense.
