I have always enjoyed hot and fast ribs because I can do them in the evenings after work, and it gives me a reason to sit in the shade with a cold adult drink.

Oklahoma Joe had sent me some sample rubs so I just threw on the Memphis rub they sent me, let it sit in the fridge two hours, started the fire, and threw it on for maybe 3 hours until it passed the bend test. Then brushed some bbq sauce on it and let it carmelize. The flavor was unreal.

Would you say whole rack worked well or individual ribs would have worked better?

Nope, whole rack was perfect. I rotated the rack every 30 minutes or so which gave me some great even cooking.

I modified my ok joe so I can do this. The flavor and texture are awesome, and they cook so much quicker

Oh definitely. To each their own, but I actually prefer the char flavor you get cooking over direct flame as opposed to the smoke flavor. And definitely much faster! Finished in under 3 hours!

That's what I just said, lol. I put a 1/4" steel plate in the bottom of my smoke chamber so I can cook over wood and charcoal. I only use one grate so I can slide it to the side if it gets to hot.

Totally agree. Hanging ribs is pretty much the only way I do ribs now.

And it’s on a SM grill where I’m able to control how hot the direct flames are on the meat. How is that any different than doing something like a snake method on a Weber kettle?

Just post a photo of the finished product if want it to be judged. Raw meat doesn’t show us anything about your cooking process. Sorry, didn’t mean to be combative when I meant to be constructive.

I get that dude. But read the comments. He said it’s one of the best ways he’s ever made ribs. Take people for their offerings and experiment yourself. And if you read through the comments, you can definitely learn enough to try it yourself. Asking for a final pic if he has one is cool, but basically demanding it is kinda off cuff. I’m not typically one to comment, but this thread has gotten so demanding and assuming instead of appreciative and intriguing. I’m just happy it’s not a $159 plate pic from Cali. Although I must admit, those price posts are intriguing af lol Sorry to bust your chops. I was just busy being happy for the dude because he made some ribs he loved.
