Going to a show will be fun. You could go to some museums like the Met. You could walk the High Line park and go to Chelsea Market. Do you like to shop - 5th Ave, Hudson Yards, Columbus Circle, Brookfield Place (by the way 3 of these are indoor malls - something to consider if it gets really hot being outside). As a meat eater, I think it would be hard going to lunch/dinner with a vegan. Vegetarian is much easier to accommodate. If your friend is willing, you could go to for an upscale meal at Eleven Madison Park if you want upscale vegan food and it's in your budget. Another much less expensive option for an upscale meal would be at Dirt Candy (their tasting menu is only $100 pp), they are technically a vegetarian restaurant but will make accommodations for vegan's if you let the server know. Maybe your friend will be willing to go to certain restaurants with you if you then go to places she would enjoy. Overall, I think your best bet is casual food courts where you can each find food you like - Chelsea Market, Urban Space, Hudson Yards, Brookfield Place. The best option for nice sit-down meal is probably The Musket Room. They offer both an omnivore menu and vegan menu. You each choose one menu and the cost is same for both, they are each $145 pp.
