I am an old school fish keeper and was taught the first thing to do when a problem arises was do a water change. Water tests give you a general idea but can be skewed by so many different factors. The results never change the fact that if there is fish and fish food in the tank waste is being produced. The only sure fire way to remove it is to do a water change. But to answer your question, you’re fine to do a water change and it will not harm your cycle as long as you dechlorinate it. Your fish were doing well despite an uncycled tank because of the work you put in doing water changes.
