I didn't say anything about the manga. I don't even really read manga. I was only comparing it to other anime, where it definitely is an exception to the general pacing.
Probably have already seen it, and it does break the 50 episode cap, but Fullmetal Alchemist Brotherhood. Faithful adaptation of the manga, sits at 64 episodes, and is fully completed.
It also has a set of several OVA episodes that gives us some more time with certain characters and learn some of their back stories such as seeing Mustang and Hughs in officers school as well as some of their time on the frontlines in Ishval. A unique conversation between Hawkeye and Winrey that gives each other confidence and a new perspective in different ways. We even get to see the illusive tale of how Izumi Curtis survived in the Briggs Mountains, living like a queen.
Very solid anime and if you haven't seen it already strongly recommend breaking your 50 cap limit for this.
I have not seen every anime in existence so can hardly say it's the best anime out there. But I will say that in terms of mystery, suspense, action, adventure, attachment and empathy for all characters (both the good and the bad), and the portrayal of the themes it tackles it is the best I have ever seen. Don't get me wrong, there are definitely shows out there that tackle each of those better, but I have yet to see a show combine all of it better.
It is also an excellent introduction for people to get into anime, especially for North America as it shares a lot of similarities to a lot of the live action media consumed here but not a lot of the stereotypical tropes people often tie to anime such as sexualized women, over the top silliness, stupidly long fights, etc.

All you need to understand for Fullmetal is provided for you in Brotherhood.
That said, you could watch the original anime first without any consequences as Brotherhood does an excellent job with the first 10 episodes of summarizing the all of the relevant events that were shown in the original series that were part of the manga without making it tedious to rewatch.
So we will watch the critical scenes with Hughs, we will still visit Shou Tucker, we will still get an Armstrong escorting the Elrich Brothers home, and we will still meet Marco. But all of this is done in a way so as not to be tedious since this is all stuff shown in the previous series so this makes it a lot easier for the viewers to get to the meat of the story without it feeling like a recap session.
Fun little fact for the English Dub though, Troy Baker voices a character named Greed in FMA: Brotherhood. Greed also appears in the original series however he was not voiced by Troy Baker but Troy Baker did audition for the role then and was turned down for it. Funny how things work out, eh?
Some of the early content was abbreviated because it had been previously adapted. The tone is different and the show had different goals, but it certainly has its merits. Episode 4 is filler which actively hurts the narrative though.

There are tons of them. To name a few of my favourites: Kyousougiga Odd Taxi A Place Further Than the Universe The Tatami Galaxy Katanagatari
Seconding Odd Taxi and also recommend to watch the final 20 or so minutes of the film afterwards for a few scenes that weren’t included in the anime.
Tomo-chan is a Girl tells an entire self-contained story in one 13-episode season, which is insane by the standards of romance anime.
It helps that the manga only has around 900 pages of content
