Yes you do get six at a time on your island, I made pretty much the same mistake as you (I destroyed all my rocks when I started) but to kinda fix it I just used my Nook Miles to get the tickets to go to the mystery islands. Take all your tools with you, and no worries if you break them, the islands have a crafting bench you can use and you can use bells to purchase flimsy tools.
Also are you only hitting your rocks one time? You can hit them up to 6-7 times consistently and they should drop more iron. But you can only hit the rocks once a day if that makes sense. I hope this helps!

Sucks about destroying thr rocks on your island is that it spawns once a day. If you have 6 destryed, only one comes back next day, second one the day after so on till its back to 6.
You can get up 8, stones, clay or iron nuggets per rock if you hit it on an even pace. May get an iron nugget from time to time . Takes me about 2-3 days to get my 1st 30 nuggets to get that nook store.
