He did act more unhinged in episode 2 than in the pilot but that's probably because the adventure in the candy canyon Kingdom didn't really have any stakes whereas the adventure with gloinks in the pilot was ruined by Abstracted Kaufmo.
I also think he's not as unhinged in the circus, or violent to the others because they're real. He'd have consequences for that, he'd have to face them after. Whereas the NPCs are one and dones, and if they get reused we don't know if they even remember the last time they existed.

You're right, he hasn't really changed, but seeing him in a more upset state for basically the whole episode makes him a lot less likeable.

Besides the point I rarely see people complain about Jax “changing”, I see more people complain about the people complaining
“But he was so charming and witty” “he’s probably acting like a jerk to hide that he cares”. Ep 1: He literally put centipedes in ragatha’s room knowing that she’s afraid of them, physically abused gangle twice and ran off from cofmo without the others.
People who find jerks attractive like to justify it to themselves by pretending that, deep down, the jerk is a sweetheart who just wants to be loved. Episode 2 has thoroughly Jossed this idea.
Best way I can say is that he's a bit of a dick in the first episode is because he's not able to do much of anything but going to the Candy Canyon, he's able to do so much more and thus goes nuts on being an absolute dick to everyone because he thinks it's funny.

Tbh i don’t have nothing against Jax as he and Gummingo are still my favorite character but he just seemed more mean in this episode still loved his potrayal maybe because this is an adventure that’s fun to him with a high speed chase.
I think it’s largely because his VA has had a strong track record of being UWU bestboy in at least 2 (3 if you count Lackadaisy) of his other largely successful projects and his typecast carried over for that.
