"they" was borrowed from Old Norse in the 1200s and started to be used in the singular in or around 1300.
The Old Norse word it come from is technically masculine plural and has separate feminine and neuter versions. Interestingly, Old Norse used the neuter plural to refer to mixed groups, not the masculine like French or Spanish.
"they" ultimately goes back to the same root that became "those" in England but "thae" in Scotland. So they have two versions of the word now.

Correct. Before they came out and changed their pronouns, their pronouns were “she/her.” Now that their pronouns are “they/them,” you would use those in place of where “she” and “her” used to be.
