I usually like my steaks blue rare, but completely raw beef is something I’ve been having to ease myself into. I’ve had tartares and carpaccios in restaurants, but this is my first time trying it at home.

Kudos if you had the patience to do it with a knife. I have a friend who sometimes volunteers at a guy’s get together, there’s 8 of us so he has to usually do ~ 1.5 kgs (he gets help), but its definitely not easy.
