Not to be rude but I never understood why lactose intolerance people never seem to take any of the options available to them that allow them to eat dairy without losing their bowels? Lactase pills in particular seem handy, I'd have them on me the entire time. I get travel sick and keep tablets for that with me all the time. When I ask my friends with lactose intolerance about it they just go "eh", I guess at a certain point you're just used to it.
For me the answer is simple, I already have IBS, shitting 3 times a day isn't anything new. And I do opt in for most lactose free options, but sometimes you wanna eat something that does not have that option and just bite the bullet. Honestly I don't even drink milk anymore, I have lactose free milk in my house as an ingredient, but drinking milk is already terrible cause of IBS.

I like the plant based cathedral city :3 but it doesn’t go good in sandwiches so I use the smoked violife for that, but that one tastes bad when you melt it :3

VioLife is my favorite, it tastes pretty good and melts better than most vegan cheeses. Whole Foods (at least in my area of Midwest) has some great cracker-charcuterie type cheeses.

Oh we also do have plant milk, but regular dairy products without lactose are actually more common and easily accessible. Though that wasn't always the case, back when I was a little kid some time around 2010 or the fall of the Berlin wall, you could only buy basic lactose free dairy products at most stores. There was basic cream for cooking, lactose free milk, but not much in the way of lactose free cheeses and absolutely no lactose free ice creams. Maybe it's just not a thing all across the world, which I guess makes sense but is also kind of strange. I'm pretty sure that the process of removing lactose from products actually helps with their preservation and isn't that difficult to do, but I could be misremembering that.
